I think we just don't see a lot of him in vore because the whole trilogy is absolutely bursting with characters who make for good preds. Even the tiniest among them is still a species with "preying" in its name.

Po (sweet, funny, big brother energy, and cuddly to boot!)
Tai Lung (I like the aspect/possibility of a reformation/redemption for Tai.
I also like the idea of both he and Po self teaching themselves the "Bottomless Maw" technique.😆)
Kai (yeah no, natural musclegut character who absorbs souls? He's begging to be used for a pred role.
You'll find I like giving the characters who work well with Po in terms of interactions redemption stories.)
Wolf Boss (he and Po get along so well together! They could've easily been friends! Have you noticed that my favourite character from each film besides Po is a primary villain?)

These are my optimal choices of preds in Kung Fu Panda.

There’s not enough art with Po as the pred, that I can find. Mostly tigress or viper.
