An elegant appetizer from vrghr !
******************************
A delightful, rather elegant-appearing appetizer that lets you play with fire! Vrghr prepared these for his Thanksgiving feast.
Cool, sweet, fruity pear complemented by rich Brie cheese on wedges of tender Naan bread, flamed to heat and slightly melt the cheese, then enhanced with a drizzle of local honey and graced with tart, brilliant jewels of pomegranate seeds. Makes a beautiful presentation, and is a lot of fun if you flame the pears on a side table near your guests. Served quickly, the pear slices remain cool while the cheese is gently warm, for a lovely temperature contrast to complement the flavors contrasts of tart seeds, cheesy Brie, sweet honey, and fruity pear. The tender Naan brings a nice foundation to it all.
Dead simple to prepare. And if you haven't got a kitchen torch (Why not? They're LOADS of fun!!), you can just heat and melt the cheese a bit with a broiler or toaster oven.
Ingredients:
1 Pear (Bosc or Anjou preferred)
1 slice Naan bread (
~4 oz Brie cheese (or other soft, creamy cheese with a bit of "character". Avoid Cream Cheese)
A drizzle of good honey
Couple dozen Pomegranate seeds (fresh is best, but previously frozen will work)
Special tool: Kitchen torch, broiler, or toaster oven on broil
Directions:
Remove some pomegranate seeds from a fresh pomegranate and reserve them in a small saucer.
Slice off a bit of the bulging 'equator' of your pear. Then, working from neck to bottom, slice 1/4" sections. Try not to cut too close to the step, to avoid including a bit of the core and seeds in your slices. If you do, just remove that little bit with the tip of a spoon - it will be hidden under the layer of Brie and no one will notice! *grin*
Slice wedges of the Naan bread wide enough to hold your pear slices.
Place a slice of pear on top of the Naan, and spread a dollop of the Brie on top of the pear. Prepare all the slices before going to the next step.
Briefly flame the pears and cheese with a kitchen torch until the cheese melts and flows a bit, and the edges of the Naan crisp slightly.
Quickly drizzle a line of good honey on top of each pear and cheese, and sprinkle a few jewels of pomegranate seeds.
Serve quickly while the pear is cool and the cheese is warm.
