So nashi pear challenge day 2
OMG these are lovely!! The main dish is pears wrapped in thinly sliced belly of pork. Topped with tomato sauce.
Side dishes: Kabocha and pear salad, and sesame seed oil soy bean sprouts and okra. These three paired really well in my mind. Lots of gentle but separate flavors.
Thank you vrghr for the idea of using meat!
Pork wrapped pears:
1 Japanese pear cut into wedges about 3/4-1/2 inch thick.
Thinly sliced pork belly (can't remember the term in English... Looks like bacon before it's been salted and smoked) 1 strip (about 1" wide and almost a foot long) for each wedge of pear. I did 16 with one of my huge pears.
Sauce
3 tomatoes chunked
A handful of cherry tomatoes
1TBSP olive oil
1tsp (or to taste) of Italian spice mix ( salt, oregano, sage, basil)
Heat olive oil in fry pan, add tomatoes and cover on medium heat for about 15 minutes. Mash tomatoes, uncover, and turn down to low, let reduce slowly stirring occasionally. This takes almost an hour. Once this is reduced, make your pears.
Wrap the pears, 1 strip per pear wedge. Oil pan slightly. Get a shield... Seriously these thing spit hot burning grease like like angry hell kittens on speed. And fry these babies on medium heat. One side, then on the thick side of the wedge, then on the other side. Only rakes 2-3 minutes on each side if that... Wait till that nice brown color. Put on dish with kitchen towel to drain.
Drizzle yummy tomato sauce over meaty pear.
Kabocha (Japanese butter squash/ pumpkin) and pear Salad:
1/4 kabocha (Japanese pumpkin/ butter squash)
3 slices of ham
1/4 of a pear (about 1/2 a cup) 1/8" cubed
2 TBSP minced onion
2-3 TBSP mayo
Steam the pumpkin until tender. Move to brown, mash lightly, Cube your ham and pear. Cut up you onion, soak in cold water, drain, add ingredients to pumpkin, add mayo, stir. Easy. Put in fridge to cool.
Moyashi( soy bean sprouts), okra with sesame seed oil:
1 pack soy bean sprouts. (about 2 cups)
1 carrot Julian sliced
6 okra
1 TBSP sesame seed oil
1/2 clove garlic ground
Good dash of salt
Chicken bouillon powder a good dash 1/2 tsp
Boil the carrots until about tender, add soy bean sprouts, boil a little longer (how's that for ambiguous) throw in the okra for just a few seconds until the turn a brighter color. Drain in sieve. Take out okra, cut in half. Add all them back into a fry pan, and add sesame seed oil, salt, and chicken bullion. Toss and fry over medium heat until well mixed. And you are done. Takes less than a minute on the fry pan.
